5 Minute Lentil and Tomato Salad

0 unless you cook your own lentils


Serves 4


1-2 cans/pouches of lentils

2 handfuls of grape tomatoes

1/4 cup of red or white onion

Balsamic Vinaigrette Ingredients (This yields more than you will probably need for the salad but it’s great on greens too). 

1/4 cup balsamic vinegar

1/2 cup extra virgin olive oil

1 tsp. of apple cider vinegar

2 tsp. Dijon mustard (or to taste) 

1/2 clove of garlic (optional)

1/2 tsp. ofherbs d' Provence (optional)  


Mix together all ingredients for the vinaigrette.  

Open 2 cans/packs of lentils or cookabout 1 cup of dry lentils. Stir into the vinaigrette. Toss in chopped grape tomatoes, red or white onions, and enjoy.
